1) The first stage: surface fire 120--160 ℃, primer 180--220 ℃; the actual temperature reaches the set temperature, the bread into the stove. Maintained for about 2-15 minutes.
Note: Small bread high temperature, short time; loaf low temperature, long time;
Role: Bread volume increase is mainly allowed to grow taller.
2) The second stage: to improve the fire when the plane 180--220 ℃, primer 200--250 ℃, maintained to meet the requirements of surface fire, about 5-10 minutes.
Role: to make bread to form a hard shell of bread, bread and stereotypes.
3) The third stage: surface fire is maintained at 180-220 ℃, primer down to 180 ℃, to maintain a uniform color of bread, about 5-10 minutes.
Role: to make bread to form a uniform coke yellow or golden yellow.
